Hi, I'm an online teacher applying for a DTV. The consulate has requested a resume and "professional portfolio showcasing digital nomad". Does anyone know if a link to my teaching profile on the site I work through is enough? Otherwise, I'm not sure what to send as the portfolio that would make it different than my resume.

I got asked exactly the same question from HCMC Embassy. I sent some of my lesson plans, a PPT of one of my online classes, some writing grading templates I had developed and some curriculum outlines I had developed. It worked for HCMC but not sure where you are applying from.
I sent screenshots from lessons, reviews, my class schedule and student roster, some proof of earnings, etc. Whatever you're able to show them as evidence of your work. You can search the group with my name to see the full post of my successful application. I never got asked for more docs and was approved within 5 days.
The real trick is figuring out how to make it all fit into a 2 or 3MB file.
