What proof can I provide for accommodation in Thailand if I'm staying at my girlfriend's place without a booking?

ORIGINAL POSTER
Last year I spent 6 months in Thailand (COVID extensions) and this year I've already spent 5 months in Thailand (60 day TR Visa + visa exempt border run) and I am planning to return for a three week trip this month. I will have been outside of the country for 2 months before I return.

I know I may get asked a lot of questions when I return so I've made sure I have the three proofs. However, I will actually be staying in my girlfriend's apartment when I return. So how can I prove I am actually staying there since I won't have a booking confirmation? Is a printed letter from my girlfriend enough? I feel like if I don't have accommodation booked that might just give them a reason to deny me entry.

TLDR : Answer Summary
The user is planning a return trip to Thailand and is concerned about providing proof of accommodation since they will be staying at their girlfriend's apartment without a booking confirmation. They seek advice on whether a simple letter from their girlfriend would suffice for immigration authorities. If you can apply in your own country for a visa i would recommend that,IO are becoming more strict on who they let in now.

Book online with Agoda, print off & cancel the booking for accommodation.

Go on Agoda. Book a couple of weeks at a hotel with free cancellation. Print confirmation. Cancel booking.

they got a bit more clever with that as well, as some airlines with onward tickets, I had someone who was asked for a receipt or proof of payment with the confirmed booking, so not always fool-proof

it's asked for at some embassies when applying for a visa, but they can't ask for a receipt at arrival. Tons of hotels on Agoda are pay on arrival.

the immigrant officer will ask for it, of he is looking for a reason to deny you entry, just another tool for them to use in their arsenal of reasons to denial.

Personally they have asked me for a receipt on an onward flight. Luckily I had a legitimate, fully paid one booked, with a cancelation clause
