TLDR : Answer Summary
A user inquired about the deadline to apply for a COVID-19 extension, mentioning that they were informed by immigration that the last day is November 30th. A comment clarified that the last day to apply corresponds to the validity of the current "admitted to" stamp or extension of stay in the passport.

The last day you can apply for a COVID-19 extension is the "admitted to" stamp/ extension of stay valid until stamp that's in your passport, assuming it's still being sold on that date

it appears they are selling the COVID-19 extension for the foreseeable future. You'll be fine.

Do you have specific info that it'll continue through December and into 2021 or just a hunch?

The OP would have no problem getting the extension of stay based on not being able to travel in December. I don't want to speculate on the future, however the Thai government has been letting people stay here on extension of stays because they can't travel since March, 2020. Reasonable people expect COVID-19 to get much worse in places like the United States (source:

If there are changes to the COVID-19 extension of stay policy, we will make an announcement about it.

the amnesty since March was about physical inability to leave Thailand rather than how intense the pandemic is in other parts of the world

It’s not only because of flights availability, one of the forms you have to submit together with COVID visa application states pandemic situation in home country as a valid reason to apply for it.

do you have an extension of stay based on employment (" the stamp") or a full page sticker ("the visa")
