You can follow a Thai Coocking class on every visa, you can do an unpaid internship on the Non Immigrant ED visa, for application the restaurant will give you the needed documents. For paid work you need a Work Permit and a Non Immigrant B visa.

Agreed Robert but many Thai language courses last longer than a visa exempt entry so you likely need a border hop or an extension.

It is a Single Entry Visa and gives you 90 days of stay, if you stay longer the restaurant has to provide you with documents and than you can apply for an Extension of Stay at local Immigration.
