What seem to be the safest land crossings to be allowed entry for those that have been in and out of the country many times throughout the year? No previous land crossings and American passport.

Make sure that if you go through Pedang Besur or Sadow, you have 20k in Thai bhat on you and you have your flight out booked and paid for, along with your accommodation for the full period on your TM7. Otherwise you will be returned. Personal experience back in June.
then you're going to be bouncing at one of the southern land borders.
As long as you don't have TWO 30 day visa exempt entries by land this year you should be able to bounce out and back in.
Have the proof of 20K baht or the equivalent in CASH because some of the southern borders ask for it.
AND
some also ask that you stay in Malaysia overnight.
As far as what border is the safest, I'd say post in a f/b group for that area of thailand or wait and see if anyone posts first hand knowledge of bouncing out and back in down there.

I’m in Surat Thani and will be heading to Bangkok upon return. I’m fine with flying out and bus or train back in.

how about stating where you are in thailand so people can actually send you to a close border?
