I don't need it to do anything else since I have health insurance from back in the US (and unfortunately they do not seem to want to issue a letter guaranteeing $50k coverage)

An important thing to keep in mind is that most international insurance policies will not cover if you test positive when you land in Thailand and are sent to the hospital for 10-14 days. Thai insurance will cover you if this happens though.
But if you really just want to get something to let you enter the country, Americans can use insubuy to get a really cheap policy that you can get a coverage letter as soon as you pay.
I'm not sure the savings is worth the risk though.
