TLDR : Answer Summary
The processing time for a Schengen visa for Thai nationals varies, typically ranging from a few days to a few weeks depending on the specific country applied to and the applicant's circumstances. Experiences shared in the community indicate timelines from 3 days for some cases to as long as several weeks, often dependent on appointment availability at embassies and the completeness of documentation provided. Factors such as marital status and local connections may also influence the approval rate and speed of processing. Accordingly, applicants are advised to start the visa application process well in advance.

If Thai married to an EU national, visa could be approved instantly in some cases. It really depends.

My friend got Norway visa in 2 weeks. They looked at itinerary carefully and only gave visa for length of stay booked plus a few days. He has many prior Schengen visas

it took about 2 weeks for us (through swiss embassy), but we got the visa just 3 days after having completed the documentation (they wanted my thai accounts as a proof instead of my Swiss ones…)

The visa is a about 10 days from appointment, it's getting an actual visa appointment that's the issue, they are not always available and you have to get a priority appointment.

The rule says no more than 2 weeks, but it highly depends on the time of year and maybe other parameters influencing the load of visa applications at the embassies.

Waiting for the embassy appointment is what takes time as it depends how busy they are. Once you’ve submitted all the documents you usually get the visa 2-5 working days afterwards. At least that was my experience with the German embassy in Bangkok.

I suspect for an unmarried Thai, the response time would be high and the refusal rate high.

She worked in a restaurant and had a letter from her boss but she never paid tax and proof of income was money from sponsor and I believe she had to have something like 60,000 baht in her bank

I presume a faster response time if the Thai lady is married to an EU national. However, the OP does not state that the lady is married.

Depends which country you apply for in the first instance. Each has its own refusal rate.... Lithuania has one of the highest acceptance rates.
