I'm aware that the balance cannot drop below 400k throughout the year but how long before the visa renewal date should it be topped back up to 800k?

I think there is not much reason to keep this topic open.
It is all too well known that immigration officers can/will&do pull answers out of thin air when quoting what the rules are as far as this or that extension.
I am only pointing out what the rules really are as published by them. Now it's totally up to you whether you use this information or whether you take what they are telling you.
You should not feel the least bit uncomfortable pulling out a paper that has the actual wording of the police order clause for the extension you're applying for, showing it to them AND making them stick to those terms.
You're not trying to be friends with them, you're trying to get your extension by following the rules they wrote and published.
, the seasoning is not counted from the date your current extension expires, it's counted from the date you apply for the new extension..
Those are two different dates; especially seeing as most offices allow you to apply for a new yearly extension 30 days before your current one expires (and some allow you to do it when you have 45 days or less left on your current extension)

The rules are clear, and in thai and english,
IF you are using banked money method for a yearly extension based on being over 50 (retirement) you need the 800K baht in the bank for 2 months before you apply for the extension (note that is not 2 months before your current extension expires)
Then you need to keep the balance at at least 800K baht for 3 months after you get the extension granted (some immigration offices give you a paper that has the date you come back to show the updated bank book balance to meet this requirement BUT some just look at the bank book and transaction history the following year when you apply for a new extension)
and then the balance can't go below 400K baht for the rest of the year.
So while I agree that different offices might tell you something other than this, believe me these are indeed the rules and if you stood fast and firm with a copy of them in your hand you'd get the extension.

The OLD rules (before the change in seasoning for the 800K baht banked money) were the money needed to be seasoned in the bank for 2 months before you FIRST yearly extension and then for every yearly extension after that the money needed to be seasoned for 3 months. Those are NOT the rules anymore and any office telling you 3 months is just trying to yank your chain..

I asked at Jomtien this week to confirm 2 or 3 months and was told 3 months.

I wish I had a picture of my lawyer’s look of relief when she saw I had not touched the balance all year. And had the TM30. But she also showed me a chart indicating when you are allowed to dip into the funds and when not to. I think her chart said three months either end as well.

and while you might have been told that the actual rule is 2 months before you apply for your next extension. IF an immigration office gives you false information you can certainly question it and ask to see the written rule. That image I posted is right out of the current police order that lists the requirements
The reason I asked was because I saw yourself and others on here saying it was 2 months. You are correct but I don't want to rock the boat so I'll go with what i was told.
2 years ago i had to provide a letter from the receptionist at my building to confirm i lived there despite having all the documentation I've used for 10 years as proof of address. Again, no point is arguing so I take one every year now.
you shouldn't feel you're rocking the boat by making immigration officers actually follow the rules their government agency wrote :O I mean they're their rules and by pointing them out to them you're not over stepping anything.
I think what you ran into 2 years ago was the fact that you needed to have filed a TM30 (which has been on the books as a real rule for 40 odd years but only started being enforced a couple years ago).
