Yesterday I went to get an extra 30 days on my original 30 day visa exemption stamp.
I arrived at the IT Square Laski Plaza floor 3, which is right beside the Laski red line station, at 12.30 midday, and had my photo copying done and passport photo taken. Very cheap and efficient I must say.
I then filled out my application and joined the queue which opened again at 1pm after lunch.
The whole process finished in 2 hours. It can seem a little unorganised and chaotic at times but as long as you have got everything in order it quite simple.
The hold ups are caused by people without the correct documentation I think.

You are correct, most of the issue is lack of proper copies, documents, etc.
There are copy shops on either side of the immigration office on the third floor. They know what copies you need AND they'll even fill out the application for you (for a fee).
REMEMBER people
IF you showed up here WITHOUT a visa in your passport and were stamped in FREE for 30 days you go to the IT Square Laksi Plaza location (3rd floor) to get an extension in Bangkok
BUT
IF you showed up here WITH a tourist visa (that you bought from a thai consulate before you came here) you go to the main immmigration office at the government complex building B on Chaengwattana Road to get an extension in Bangkok
