How can I prove my location while applying for a Thai visa from Albania without a passport stamp?

US passport applying from Albania

I'm planning on applying for the DTV soft power with a cooking school. 

I'm currently in Albania, which uses an electronic entry for US passports (ie, no physical stamp on my passport). How can I prove that I am not in Thailand without this?

Also, it seems like the Honorary Thai Consulate in Tirana is no longer working. Will this be a problem? (I've seen that sometimes an in-person interview is required?)

Receipt for the hotel or accommodation you are staying in should provide proof of location. Anything with your name and address and a date should work.

If you are in Albania you apply via the embassy in Rome, if they do want to interview you I'm sure they'll do it over zoom or whatever
