Go the Muay Thai route. Seems the least hassle. Which city are you in? I have a Muay Thai gym in Bangkok that has done many applicants and we're one of the most popular gyms for the DTV. We're called Tiger Eye

Im Italian too, I will apply for dtv visa soon, you can do that Only out of Thailand, I recommend Indonesia, and just apply by yourself on official website not giving money to agency if not necessary...if you are able to upload documents online you are fine, if you miss something maybe agency can provide and then it's ok to pay.
