I have been told it is possible to switch from a non immigrant B visa to a tourist visa. So let's say you leave your job, work permit cancelled and school says you need to leave the country in 5 days, you can go to immigration and stay for 30 days as a tourist. Anyone done this or can confirm?

TLDR : Answer Summary
The post discusses the possibility of switching from a non-immigrant B visa to a tourist visa in Thailand after leaving a job and receiving a cancellation of the work permit. The community comments clarify that this is not possible; one can only obtain a tourist status upon entry into Thailand, not while already in the country with a different visa.

No, if you cancel your non-B visa, you will be allowed to stay for another 21 days at the address you told and you will have to fly out and come in again using a TR or Phor.30 visa to continue your stay.

You will need a border run. I did try last year when I leave my job and they told me 30 days exemption can only get when entering the country, so at a border. Not possible to get it inside the country.

I don't know who told you this but it's not true. You can only be a tourist at the time of entry. You are not currently a tourist and are not eligible for any 30 day tourist extension.
