Does anyone know if we can get the yellow international vaccine passport just by walk in and queue? On the app for appointments they don't have any until 5th January and need it for middle of Dec trip.

No, you need an appointment. You also don't need the "vaccine passport" to travel, proof of vaccine both digitally and on paper are accepted everywhere.
the only problem with this if it is for the UK is it needs to be in English. Gov.uk website is clear on this point. My gf certificate is only partially in English so I am not sure if that would qualify. To be sure we got her a Vaccine Passport from Rayong which is 100% in English
