TLDR : Answer Summary
Yes, you can get a COVID extension for your OA retirement visa issued in the UK. As long as you meet the necessary requirements such as cash income and insurance, you should be eligible for the extension. Typically, a 60-day COVID extension can be applied for before your current entry stamp expires, and it will likely start from the date of application.

If you meet all the necessary requirements (cash/income), insurance, etc, it makes sense to get the 1 year extension, as it's the same cost.

You mean on the year entry stamp you got when you entered on the O-A visa?

You should be able to get a 60 day covid extension on it no problem. You would probably want to go close to when the current entry stamp is expiring because they will most likely start the covid extension on the date you apply (not add it to your current expiration date).

as long as the covid extension program is still running when your stamps expiring you shouldn't have a problem doing it
