TLDR : Answer Summary
Education based visas, specifically for enrolling in language schools in Thailand, are typically single-entry visas. Applicants receive a 90-day Non-ED visa, which does not offer multiple entries. It's advisable to check with a Thai consulate in your home country for any updates or changes in visa policies.

Get the METV again in your home country when returning next year. Then decide what is best for you.

AT this time there is no thai consulate in S/E Asia that will sell year long multi-entry visas for enrolling in school
You enroll in a language school, you get the documents from them and then you go to a thai consulate and get a 90 day single entry Non-ED visa.
I'm actually here at the moment on a METV and was thinking of coming back later in the year or even early next year depending on family health issues back in the UK. I didnt just want the Ed Visa as a get around but genuinely want to enrol in a language school. If I cant get a ME ed visa I'll go down the retirement visa route for which I'm eligible. Thanks again.๐
