I visited back in January 11th for 7 weeks on visa exempt, then returned again mid May for 16 days then again mid September for another 16 days which on that occasion was asked how long would I be in thailand for by the IO, would it be fair to assume I'll be pulled aside or even denied entry if I was to return on the 9th December for 56 days? Any opinions guys as I'm seriously thinking of leaving it till January instead..

December or January won't make any difference. But I would suggest you look at getting an appropriate visa. Visa exempt entries are primarily for the purposes of short term tourism.
The truth is it all depends on the IO’s mood and the number of people they want to deny entry on that day. There are people who have been denied after just two entries within a year. No answer will be able to reassure you enough imo.
