TLDR : Answer Summary
As a European citizen wishing to volunteer or workaway in Thailand, you would need either a Non-Immigrant Type B (business visa) or a Non-Immigrant Type O (other) visa. Additionally, a work permit is required. It is important to note that you cannot legally work with a visa exemption.

To work or volunteer you need either a Non-Immigrant Type B <- business OR a Non-Immigrant Type O <- other AND you'd need a work permit too.

No matter what your nationality you cannot legally work on a visa exempt entry.

With a work visa based on marriage can you open a account on SET Stock Exchange Thailand.

You pay tax on every trade you make ?

depending on the thai consulate you're going to apply at to get the visas, I'd look at their websites and see what the requirements are.

Most people get documentation supplied to them by their employer or the place they're volunteering at.
