To work or volunteer you need either a Non-Immigrant Type B <- business OR a Non-Immigrant Type O <- other AND you'd need a work permit too.

depending on the thai consulate you're going to apply at to get the visas, I'd look at their websites and see what the requirements are.

Most people get documentation supplied to them by their employer or the place they're volunteering at.
