What should I consider when applying for a visa in Vietnam based on recent experiences?

Thank you everyone for you help. I just got my email and was approved in Vietnam (HCMC). The process took about 10 days to process because they asked for addtional documents + a weekend.

1. Probably obvious but make sure your bank statements have your name on them. My first ones had just my account number so I had to get the bank to send me ones with my name too.

2. I included the payments in my bank accounts originally but they wanted the pay slips so I sent them my electronic payment slips. I compiled them all in a google doc with dates and exported it as a pdf.

I ended up adding things in google docs with an explanation. Had to use a PDF compressor to make sure everything fit into the 3mb requirements but in the end it worked well.
