Does anyone have any experience with the Thai Language learning Education visa (bonus points if your experience is in Koh Samui)? Is it pretty straightforward forward or is there anything I need to look out for? I'm hoping to come on a 14-month language learning visa.

Are you getting the ED before you come to Thailand (I'm not sure if you can even do this yet) or switching once you arrive?
Just beware that basically every school on an island charges a 20,000₿ conversion fee to get the paperwork ready for you to go to immigration and change to ED visa. They charge it because they can and there's not much competition in the provinces.
Also last i knew the in-country ED was only allowed to go for 12 months.
currently the Ed visa is only 8 months due to covid and no land borders being open. It will most likely change back to 12 soon as surrounding countries start to open. The issue is with entering back to Thailand and getting the Thai pass complete.
I just did it too and it's 8 months total right now. The additional 4 months is not currently offered due to no land borders open. At least that is what my school told me 30 days ago.
nah. I wouid love Thailand just to get it's stuff together and offer decent visa for long term people who want to contribute to the economy here, that are under 50. I'm only about 1 month in I the Ed visa and man Thai is a hard language to grasp some times.
