You have to leave to country on the last day of your Admitted to Stay date. Don't plan overstay because you think it might be less busy at a Thai Consulate. Good luck.

Go on a Friday, have a great weekend and pick up on Monday

Monday is by far the busiest. Thursday is the second busiest, but it's not as bad as Monday. Other days are quieter, it's still a busy consulate but it is very efficient at dealing with the numbers they get.
