Do not leave the country you apply in, until the visa is granted.
You will make it easy for the Embassy to reject the application, and loose the 10.000+ baht fee.

Change the appointment in Thailand it you will have your application canceled. Option is to attend your urgent matter In a online meeting. Why go to Bali if you have this matter

What's the point of flying/applying to Bali if you know you have an urgent meeting in Thailand? Apply only when your schedule allows it. You may receive interview requests and/or be required to provide proof of your location. Your application may be denied.

When your kids need an urgent medical appointment, you take them to the nearest hospital covered by the international insurance you’re supposed to have as an expat/traveler instead of waiting and flying 4 hours. If you come back and It is not noticed and no interview required probably nothing will happen. Get visa and go on Visa run to activate it. However, why even start the application if you need to return to Thailand urgently - why not fly today?
