I have read elsewhere that the insurance needs to be in Thai so they had to take out a new insurance

It does not. But they may require you to have your insurance sign some sort of equivalent form.

yes has to be Thai it says that on the application but for some reasons the initial visa is being issued with non thai insurance. Problem is some people buy a years policy and then 3 months later got to buy Thai insurance

Some immigration offices are very relaxed, some are more strict. IF you submit the documents required for Bangkok Immigration (see attached), it *WILL* be accepted.

For the insurance, it'll be the same insurance that you used to enter Thailand.
