I'm interested in possibly going for the elite Visa, either for the 5-year or 10 year. Can someone tell me how much money they need to have to show as proof of funds when they apply?

You don't ever have to prove funds for Thailand elite. You just have to pay for it after you're approved. I suppose that's proof of funds once it hits their bank account.
