Answer summary
Several recommendations for Thai language schools in Chiang Mai were provided, particularly CMU, which offers a recognized program for about 32,000 baht with classes twice a week. Additionally, there are some muay Thai schools in the area that can provide an education visa for around 50,000 baht. It was also noted that schools are starting to enforce attendance for visa compliance.

They are starting to enforce attendance. Gone are the days of getting an Ed visa and not going to school .

If she actually wants to learn Thai, CMU has one of the better programs in the country, about 32k baht and go to class twice a week.
If you're just after an ED visa, there are a couple muythai schools in Chiang Mai selling 1 year Ed visa for 50k baht.
