How many Visa Exempt entries can I do ( crossing border )? I heard it was 2, I currently have done it 1 time, so I am assuming I can do this 1 more time?

You're correct. You can enter by land twice per calendar year under visa exemption. Visa exemption can be extended by 30 days for 1900 Baht at any immigration office.
