I’m on a dependant visa which will need renewed in a few months time. I’ve previously had the 400k in an account but also transfer a significant sum over the year. Can I use previous transfers and wage slips instead of the 400k?

It's a question that you need to ask your local immigration office. I tried to do this and my local office reacted badly. In anyevent you will need 12 monthly transfers over 40kthb as a minimum.

I normally transfer every 2nd month but it’s in excess of 80k per transaction
