Can a German citizen receive a new 30-day Visa Exempt Entry after leaving Thailand for one week?

Question:

If I (German) enter BKK in January with a 30 day Visa Exempt Entry and get afterwords a 30 day Extension in HH. Than leave after about 58 total days in Thailand for about one week by plane and come back to Thailand, will I get a new 30 day Visa Exempt Entry?

Yes. You can do that, subject to Quarantine, until Immigration consider that you are no longer a tourist.
