TLDR : Answer Summary
The discussion centers around the travel requirements for an unvaccinated 5-year-old flying to Thailand in August. The consensus among participants is that while entry rules may change, currently unvaccinated children under 12 do not need to quarantine if traveling with vaccinated parents. A negative RT-PCR test is also required prior to arrival, but specific regulations for children are still uncertain. It is advisable to obtain a certificate of recovery if the child has previously had COVID-19.

I’ve not seen any reports from Vietnamese people trying for a ThailandPass. That’s possibly because of a language issue. There may well be similar Thai visa / entry groups for Vietnam passport holders or speakers.

they should accept whatever you're able to provide. They accept handwritten CDC cards from the US.

I've heard that they may only accept things in English or Thai though.

I'd suggest posting in the Farangs Stranded Abroad group. This is a visa group not an entering Thailand group, you're much more likely get to answers there.

Part of the changes for May 1st say that unvaccinated travellers only need a negative RT-PCR test 72 hours prior to arrival and would not need to quarantine. Whether that will be required for young kids is not known.

If she has already had covid make sure you get a certificate of recovery from your doctor to state that she has recovered from covid. Just a precaution

There hasn’t been much mentioned about kids regarding the changes made for April 1st. I believe currently that unvaccinated kids travelling with vaccinated parents are not required to quarantine. Whether that’s the case or not August is a long way off and expect entry requirements to be different by then.
