If I have a passport expiring in May and I'm travelling to Hong Kong over New Years, will I be denied boarding on the way back to Bangkok for not having valid passport for the next 6months? Even though I already have the re-entry visa and WP?

Denied boarding? You have to ask the airline company you like to use. Not much to do with Immigration in Thailand or Thai Visa.
