An ED visa is for studying in a school Thailand with a curriculum and a time table. If you actually stay abroad, I guess you will need another category of visa for your next visit to Thailand.

The ED visa must be extended every 90 days, unless going to an actual university. If you miss any of these 90 day extensions then at that time, whether you have a re-entry permit, or not, the visa is voided.
Indeed they would be, and quite possibly be denied entry. Immigration take the view that the ED visa is issued for studying and if you haven't been doing so they will likely just turn you around.
