Yeah, there’s a monastery in Chiang Mai that accepts nuns who are foreigners and will teach and sponsor a visa.

Easiest option is probably to apply for a six months multiple entries tourist visa, so-called METV. Gives you a 60 days stay upon entry each time within 180 days which can be extended with additional 30 days at your local immigration. This means you’ll need to do one border bounce if you want to stay for more than 3 months.
