I would suggest a mix of city life(BKK) Quiet beaches/islands as well as northern Thailand with it's beautiful temples and mountains.

The sleeper trains are a great way to get around and I'm sure you kids would love that.

OK Thailand is a very big Country with diverse landscapes. Everything from coastal beach towns and islands to mountains and jungle to the very large Capital City of Bangkok. You need to be more specific as to where You plan to go. Each region has its own things to do. Your budget also dictates where you might want to stay and what you can afford to do. Finally how long are you staying? There are just way too many answers for the little information in your questions.
