If I'm heading to Vietnam to apply for the DTV (I'm currently in Thailand) should I include the address of the accommodation in Vietnam on the cover letter, or my permanent address back in the UK (I haven't been there for years)?
Any tips on what I should/shouldn't include in the letter? I work remotely and have the funds etc.

For the cover letter you do not need to put your address as they are not going to write to that address. I just addressed it to the embassy I applied to, that's all. You can Inc reasons for applying for the DTV, your intention to abide by its' rules.

I submitted my 2023 income/tax for 2 companies i work for . Not compulsory to do so. i applied in Taipei. You do not have to submit tax returns unless specifically asked for.
That is fine, many approved without submitting tax returns. Taipei is a strict embassy for approval which is why i did it. Vietnam is a very friendly embassy so you will be ok
