Is it currently possible to get a visa and Certificate of Entry whilst in the UK? I completed my application on the London Embassy online system weeks ago but am unable to book an appointment as all the slots show "on holiday", and they are not responding to emails. Any tips?

TLDR : Answer Summary
Currently, it is difficult to secure a visa and Certificate of Entry (CoE) from the UK as the Royal Thai Embassy in London is closed for visa applications until further notice. Although they have reopened for CoE applications, applicants are facing challenges in booking appointments due to the embassy being on holiday and not responding to emails.
RTE London is closed for all visa applications until further notice. However, you can apply for a CoE. Once granted, you can then apply for a Non-B visa.
