TLDR : Answer Summary
When filling out the TM7 form for a visa extension in Thailand, you should write the number of days you wish to stay based on your situation. If you are applying for a 60-day extension to visit Thai family, you would write in 60 days.

How many days do you want to stay? You are using the 60 day extension of stay baesd on visiting Thai family, so you would write in 60 days.

Also, I'm filling in the TM8 form as well for when I go back. It asks where my previous visa was issued. I got my non o visa from the Thai Embassy in London. So as I'm 'extending' would I put London. As I would have already been given the 'extension' here in Khon Kaen?
I'd write in "Thai Embassy of London", or ask the counter what you should put.
HOWEVER... I highly recommend NOT getting a re-entry permit on a 60 day extension of stay based on visiting Thai family though, and do it after you get your one year extension of stay.
I don’t know what exactly is required at your immigration office, but expect the following:
1. Your passport and a copy of:
a. The data “picture” page.
b. The most recent visa (if applicable).
c. The most recent entry stamp or extension of stay (if applicable).
d. The departure card (“TM 6”) that should be stapled in the passport.
2. The extension of stay application form (“TM 7”).
3. A copy of the submitted Notification of Residence of Foreigners form ("TM 30”).
4. The Thai spouse physically next to you, and;
- Their Thai ID card and a front and back copy of the ID card
- Their housebook, and a copy of the first page.
5. For Thai spouse, a marriage certificate (either the rose border certificate, or a translated copy from the applicant’s home country), and a front and back copy of the marriage certificate.
6. 2x passport sized (4cm by 6cm) photos.
7. 1,900 THB processing fee.
Different immigration offices have different requirements, and this may include:
