Has anyone transferred a non b extension of stay from one company to your own company?
How do you coordinate the two at immigration?
I don't want leave the country in order to do this.

It depends on your current employer, your company, local immigration offices, and labor offices if you can really do those in Thailand or not. Go to visit those offices and check for detail. That's the only way you can know.

Don't forget you also need to coordinate the labor office to change the work permit that is required to apply an extension with new company.
But unfortunately, detail about work permit is out of the scope of this group. This is just a head up.
Go talk to the ministry is labor both where you hold the work permit now and at the office where you will get you new work permit.

you get documentation from your current employer stating you stop work on xx date,
you go cancel your current extension with that paperwork at the immigration office that issued it, then you go to the new immigration office ( you said it involves two offices) with the documentation required and apply for the yearly extension of stay
All you're doing is changing the reason for the extension from employment by one company to employment by a new one
most offices let you cancel an extension a week or so before the termination date on your paperwork from your employer, they will cancel the extension and give you a new stamp dated until the termination date on the paperwork. That gives you some time to go to the other office and apply for an extension
