Has anyone heard if the post office has resumed the ability to send international parcels / ems? or if they have a timeline for this?

NO still not yesterday l have a letter for Holland 12 gram weight and the told me we only can send this now by DHL or FEDEX 2350 baht.....oeps less important than that letter.

Uhm my wife mailed a parcel to my mum in uk last month from post office. The only thing was couldnt track it.

They absolutely stopped airmail which is now normal mail in the First World and not an option as it is in Thailand.
