Have gone though the Australian Consulate Bangkok website, trying to find info if I need to make an appointment to have documents signed/witness. Can't find that info on site? You are right

, neither the aussie consulates in Koh Samui or Chiang Mai can do notary services.

You don't need an appointment to get a notary at the Bangkok Aussie consulate, just show up during their opening hours.

Be aware of the upcoming holiday closures next week
