Right now you can only go by air. Don't think it's possible as a day trip as you need tests before you fly, you also need to complete Thai pass, have insurance and so on

Yes. IF the borders to Cambodia are open, and IF Cambodia does not require to stay the night. When you return you will get another 30 day visa exempt by air. You will need to get another Thai Pass, and meet any other Thailand entry requirements.
