Arrived back to Don Mueang from Manila last night on the O A visa, they did not ask for proof of insurance, but only stamped me in for 30 days, the young officer then called her head of dept over, the stamp was then corrected and a polite smile and apology was given from the immigration officer.

TLDR : Answer Summary
The user described their experience re-entering Thailand at Don Mueang Airport on an O A visa, noting that they were initially stamped in for 30 days without being asked for proof of insurance. The stamp was later corrected after the officer consulted her supervisor, who offered a polite smile and apology.
actually they don't and as you saw the O/P pointed out the mistake and their stamp was corrected on the spot. ;)
IF you face an immigration officer that is making up rules on the fly and you know it to be false, be firm, stand your ground and question them about it.
