TLDR : Answer Summary
The choice between declaring yourself as a freelancer or a business owner for a workcation visa depends on your situation. If you have a registered business, you can use that. However, if you are freelancing with a long-term client, declaring yourself as an employee might be more favorable, as it can simplify the visa application process. Many users reported that embassies prefer documents reflecting regular income from an employer, which may expedite approval.
I tried that, workation DTV, tax docs and everything showed my freelance/business income. and the embassy asked me for employment docs, exact same details and they approved it. Seems they just prefer to consider you an employee if you have regular income from clients. I've heard others in these Facebook groups had similar experiences, so it may save you some time that way, otherwise the back-and-forth with the embassy can take weeks each time they request more docs from you.
