A Volunteer visa is a visa that allows a person to stay inside Thailand while they do volunteer work. If you're asking if a volunteer organization is good or not, this isn't the right group for it. If you're asking if you can live here on a volunteer visa, you can.
I have this visa. Non-o multi entry based on volunteering. I received a stack of documents from the organization and applied at the consulate in NYC (US citizen). Got my visa the next day. Came to Thailand, got a work permit, and will change (not sure of the process) to a single entry. As long as you have the backing of an organization that knows what they’re doing, you should be fine.
I've been on non-O volunteer visas for 3 years. It's a straightforward affair as long as the paperwork is done right.
There is however a peculiar process regarding extensions. Volunteer visas are usually extended for 90 days only, because 1-year extensions require an agreement between your foundation and an official government agency. It's rare and difficult to secure.
Another thing is that immigration officers are careful about people who could misuse this visa. I regularly have to answer a few questions upon entering the country, just to make sure I'm not a freeloader.
You can not apply for this visa without the back up of an Volunteer organization. And I guess that these volunteer organizations have their own standards to hand out their documents to people.
Contact the organization where you are willing to volunteer, let them apply for the work permit and organize all the documents for the visa.
