However going FROM Bangkok to some provinces do require a covid test.

If you're already in Thailand are a other options than an STV. If you can't qualify for a retirement or marriage visa, there are still ED and Volunteer options, as well as the 60 day coivd extensions.

Actually don't think you'll have a problem. Bangkok immigration is only processing extension if it expires within 3 days now, due to covid.

Requirements for the COE are pretty much the same for everyone. Non immigrant holders shouldn't need a return ticket, but some have been asked.

No, you only need covid insurance. You SHOULD only need it for the first 30 days, again some have had issues though.
